Today I am creating more apple pie in a jar. This is another staple food in our home. This was one of the first things I ever processed in my canner, and it continues to be a traditional recipe made each fall after we harvest apples. It is based off of my grandmothers apple pie recipe that has been a family favorite for generations. In place of her traditional thickener in the recipe I use chia seeds. Chia seeds add fiber, protein, Omega-3 fatty acids and many micronutrients to the apple pie base. I use very little sugar, so this is by no means sweet like the store bought pies or fillers. It is also gluten free and free of additives. I use simple ingredients: apples, chia, cinnamon, sugar and lemon juice.
The favorite way to eat this in our home is as a side dish with dinner, but it makes a grand dessert! It can be quickly heated up in the microwave (after removing metal ring and lid of course!), or warmed on the stove top. My husband prefers to eat it right out of the jar, even if it had been cold in the fridge. You could also place it in a partially baked pie crust and warm it during the the final baking time to create a pie just like what my family has enjoyed through the generations. Another way to use the filling is in a apple crisp made with gluten free oats.
My grandmother handed down her recipe and taught me how to make her apple pie around the time I had my daughter. I remember vividly how she taught me to make the dough; completely different than what any cookbook would show you. It was difficult, but worth the effort with the end result being apple pie perfection. Someday, I hope to create a gluten free pie crust that has as much flavor and texture as her gluten-full pie crust had!
